Smothered Pheasant


1 pheasant, cut and floured
1/2 c. butter
1 med. onion, sliced
2 Tbs. sherry
3 Tbs. water

Soak pheasant in salted water and drain. Roll in flour and brown in butter. Cover with onion, sherry, and water. Simmer for 1 hr. Serves 4
